We're booked up year-to-year for Derby. There's no late-minute calling and asking for a Derby party. Last year we did boxed lunches for 500 for five different horse farms.

A Macmillan nurse looked after mum when she was dying and she was fantastic. This party was for mum and I wanted to remember her by giving to Macmillan.

I really think of food as art, so it gives us a chance to showcase the food as well as the flowers that are there. Every station and every plate was a really beautiful display within itself.
