If I eat at the Emporio Armani Caffe, my favorite thing to order is risotto or pasta with tomato sauce in winter; in summer, I prefer a Caprese salad, Parmigiano cheese flakes, or some truly fresh ricotta cheese.

Tomato sauce works best with dried pasta, because the tomato sauces tend to be too heavy for the fresh pasta. Fresh pastas tend to absorb sauce right away. Fresh pastas always work better with broths or lighter sauces.

I'm big on tomato mozzarella salad. That's my favorite all-time food.

Pasta with melted cheese is the one thing I could eat over and over again.

You need a little bit of tomato sauce, or a little bit of lemon juice, or both, to make it sour.

I usually try to eat in my restaurants before I fly, as I'd rather sleep on the plane and just order a salad with cheese, maybe some ice cream.
